I would like to tell you about the sweets served at tea ceremonies.
Japanese sweets are called wagashi in Japansese.
There are two main types of wagashi: dry confections(higashi) and main confections(omogashi).
Higashi is usually served with thin tea(usucha), while omogashi is typically served with thick tea(koicha). However, omogashi is sometimes served with usucha.
Since we are serving usucha, we will serve higashi.
The important role of wagashi is to enhance the flavor of the tea.
At a tea ceremony, matcha is the main attraction, and the sweets play a supporting role.
All sweets are eaten before matcha.
The most important consideration in a tea ceremony is how to make a tasty cup of matcha.
