In the previous article, I briefly talked about the sweets served during the tea ceremony, and in this article, I will focus on dried sweets called higashi in Japan.
Higashi is a type of dry Japanese sweets with less than 10 percent water content. There are many types of higashi, but some of the most well-known include ariheito, kompeito, candied fruits (dried fruits with sugar), wasanbon and rakugan.

Rakugan and wasanbon look very similar, but rakugan is made from grains such as rice flour mixed with sugar and starch syrup. Wasanbon, on the other hand, is made exclusively from a special sugar called wasanbon sugar.
Wasanbon sugar is made from fine-grained sugar made from sugarcane, and has a smooth texture, elegant sweetness, and mild flavor.
At our tea ceremony, we serve wasanbon.
