Today I’d like to talk about Wasanbon, a traditional Japanese sugar.
Wasanbon is a high-quality sugar made using traditional methods from a type of sugarcane
called “bamboo sugar,” primarily found in Tokushima and Kagawa prefectures.
It is characterized by its elegant sweetness, smooth texture, and subtle flavor.
Wasanbon is made by boiling down the juice of a native variety of sugarcane called
“chikutoh” to produce an amber-colored mixture called “shirashitatoh.”
The shirashitatoh is placed in a wooden box and pressed with an
“oshibune” (pressing machine) to separate the molasses.
The separated shirashitatoh is then kneaded by hand with a small amount of water,
a process known as “togi” (polishing), repeated 3 to 5 times.
The “togi” process refines the particles,
and the sugar is finally dried in the sun to complete the product.
Unlike white sugar, the manual grinding process leaves a moderate amount of
molasses behind, giving it a refined, mellow flavor that
combines the richness of brown sugar with the clean sweetness of granulated sugar.
